Mumbai style Pav Bhaji

Recipe for Pav Bhaji

Preparation time : 35 minutes


Ingredients:

  • Large potatoes 2
  • Carrot medium size 2 
  • Fresh or frozen green peas 50 gm
  • Half of medium size cauliflower
  • Chopped medium size onions 2
  • Chopped green chillies 2
  • Grated ginger 1 inch
  • Grated garlic 2 tbsp
  • Chopped medium size tomato 2 
  • Chopped medium size green capsicum 1
  • Chopped coriander leaves 1 tbsp
  • Kashmiri red chilli powder 2 tsp
  • Turmeric Powder 1/2 tsp
  • Lemon slices for garnish
  • Onion slices for garnish
  • Pav bhaji masala powder 1 tbsp (use any brand)
  • Butter 4 tbsp
  • Cooking oil 2 -3 tbsp
  • Salt to taste
  • Pav (bread) 4 to 6
How to make Bhaji :
  • Boil in pressure cooker potato, cauliflower, carrot, green fresh peas( if you use frozen peas then no need to boil, you can add directly)for 2 whistle on medium flame.
  • Mash all the vegetables and keep in a bowl.
  • Heat up a pan ,add 2 tbsp cooking oil and 1 tbsp butter.
  • Add grated garlic,ginger and chopped green chilli. Fry till it fragrant  on medium flame.
  • Then add chopped onion and fry till they turn translucent.
  • Add chopped capsicum,green peas(if frozen) and fry it for 2 minutes on medium flame.
  • Add chopped tomato,salt and fry till it turns soft and mushy.
  • Add pav bhaji masala powder and kashmiri red chilli powder ,mix and fry for another 2 minutes.
  • Add the boiled mashed vegetables and 1/2 glass of veggies stock or plain water,stir it . 
  • Mash the vegetables with potato masher in a pan and cheak the consistency and add vegitable stock or plain water if needed.
  • Add little salt,cover the pan and cook it  for 3 to 5 minutes on low flame until the bhaji thickens.
  • Turn off the flame when Bhaji reaches a desired consistency.
How to make Pav Bhaji :
  • Slit the pav buns horizontally leaving one edge intact.
  • Heat butter on a pan. Open the buns and sprinkle some masala on butter.Place  the pav and toast it for 2 minutes.
  • Garnish Bhaji  with chopped onion and freshly chopped coriander leaves and 1 tbsp of butter.
  • Serve Hot Bhaji with Masala Pav and slice onion &lemon.
