Chicken Momos Recipe


Recipe for Chicken Momos

Preparation time :2 hour

Ingredients:

 For the dough:
  • All purpose flour 250 gm
  • Some warm water to knead the dough
  • 1 tbsp of vegetable oil
  • 1 tbsp of salt
For the chicken filling:
  • Boneless minced chicken 200 gm
  • Chopped  onion 3 medium size
  • Chopped Spring onion green portion 1/4 cup
  • Chopped Green chiili 1 tsp
  • Chopped fresh coriander leaves 2 tbsp
  • Crushed black pepper 1 tsp
  • Ginger-gerlic paste 1 tbsp
  • Dark Soya sauce 1 tsp
  • Fresh lime juice 2 tsp
  •  Salt to taste
  • Vegetable Oil 2 tsp
For the chicken soup:
  • 4 bowls water (to make 2 bowls of  chicken soup)
  • 2-3 tbsp of finely chopped  mixed vegetables (carrot,cabbage,beans etc)
  • Few slice of  chicken /chicken bones 
  • Chopped onion 2 tbsp
  • Chopped spring onion 1 tbsp
  • Crushed black pepper 1/2 tbsp
  • Chopped garlic 1 tbsp
  • Vegetables oil 1 tbsp
  • Dark soya sauce 1/2
  • Vineger 1 tbsp
  • Salt to taste
For schezwan sauce :
  • Dry red chillies (medium hot) 10 pieces
  • Finely Chopped garlic 2 inch
  • Chopped ginger 1 tbsp
  • Vineger 2 tbsp
  • Dark soya sauce 1 tsp
  • Tomato sauce 2-3 tbsp
  • Vegetable oil 4-5 tbsp
  • Crushed black peper 1 tbsp
  • Salt to taste
How to make MOMO:
  • Mix all purpose flour(maida),salt & oil to a large bowl.Add water little by little knead to a very soft & smooth dough.
  • Leave your dough in the pot with the lid and coverd for 30 minutes
  • Take a another bowl and mix all the ingredients of chicken filling together( minced chicken no need to boil,as chicken is soft meat.)and marinate it for 15 minutes.
  • Make small size ball from the dough.
  • Flatten them to very thin round shape wrappers.
  • For stuffing hold wrapper on one plam,put one tbsp of chicken mixture in the centre of it and with the other hand bring all edges together of centre while making pleats.Pinch & twist the pleats to ensure the absolute closure of the stuffed dumpling.
  • You can also shape them to your  preference.Please ensure absolute closure of the stuffed momo.
  • Heat water to your steamer or in a idly cooker.Brush oil (or butter)lightly to your steamer or idly cooker's rack.
  • Arranged uncooked momos in the steamer with some space left between them. or incase  you are using idly cooker then you can arrange the momos in cookers rack . Remind it that donot arrange uncooked momo in the last rack of idly cooker. 
  • Close the lid and allow steaming momos (15-20 )minutes over medium heat.
  • Take the momos of the steamer and serve with hot Schezwan sauce and chicken soup.(Please be careful not burn yourself on very hot Chicken Momo Filling.)
  • If you want to eat Fried momos then you can also deep fry the momos  and serve it.
How to make CHICKEN SOUP:
  • Heat oil in a pan and add chopped garlic  to it.
  • Add the chopped onion and fry till it starts becoming lightly brown.
  • Next add the chopped carrot, cabbage and beans.Fry the vegetables.
  • Add few slices of chicken( also bones of chicken )and fry for 4-5 minutes.
  • Then add the vineger and dark soya sauce.
  • Add salt to taste and crushed black peper.
  • Then add water and covered with a lid over low\ medium heat until water reduces to 2 bowls. 
  • Served with chopped spring onion and black peper.
How to make HOT SCHEZWAN SAUCE:
  • Rinse and then soak red chilies in hot water for 30 minutes.
  • You can also de-seed  the chilies before you soak them.
  • Then drain water and remove the stems and then break the chilies.
  • Add the chilies in a grinder or blender and add some water and make a smooth paste of the red chilies.
  • Heat vegetables oil in a pan. 
  • Add chopped ginger and garlic and saute till their raw aroma goes away.Don't brown them.
  • Add the ground red chilies paste and stir.
  • Then add the crushed peper and saute 2-3 minutes more till you see oil from the side of the sauce.
  • Add a 1\2 cup of water and stir it .simmer for 2 minutes.
  • Then add salt ,vineger ,dark soya sauce and tomato sauce and stir it and continue to cook for 5-6 minutes more.
  • Cheak the taste of schezwan sauce and add more salt and peper as required.
  • Serve HOT SCHEZWAN SAUCE with Chicken Momo.You can also add in recipe like Schezwan Fried Rice or Noodles,Schezwan Chicken.
  • Onece the schewzwan sauce cools down then collect it small air tight container.It stays good for about 2-3 weeks in a refrigerator.
